Understanding Wastes from Idaho Beverage Production

Abstract

Food and beverage production is increasing along with the growth in Idaho’s population. Included in this growth is the number of small-scale wineries, breweries, and distilleries. The wastes from beverage production are often minimally pretreated before being discharged to municipal treatment facilities. This sector of food and beverage production is akin to the well-established dairy industry in Idaho. Many dairy producers have opted for constructing and operating their own waste treatment systems in lieu of pretreatment and fees for discharging to often overburdened municipal treatment facilities. The impacts of many small, concentrated beverage producers discharging to municipal treatment facilities may have significant overall effects despite individual producers generating minimal flows of high strength wastes. The goal of this research is to better understand the wastes produced by the growing number wineries, breweries, and distilleries in Idaho. The focus is to examine the apparent differences in beverage production processes as they compare to dairy production.
